1/2cupCrushed Ritz crackers or breadcrumbs
2tablespoonsButter, melted
Instructions
Preheat your oven to 350°F (175°C).
Prepare the Rice-a-Roni according to package directions, omitting any extra seasoning if desired for less salt.
In a large mixing bowl, combine the cooked Rice-a-Roni, shredded chicken, sour cream, cream of chicken soup, milk, and half of the shredded cheddar cheese. Mix until well combined.
Spread the mixture evenly into a lightly greased 9x13-inch baking dish.
Sprinkle remaining cheddar cheese evenly over the top.
In a small bowl, toss together the crushed Ritz crackers (or breadcrumbs) and melted butter until well coated.
Sprinkle the cracker mixture evenly over the casserole.
Bake uncovered for 25-30 minutes, or until hot and bubbly and the top is golden brown.
Let cool for a few minutes before serving for easier slicing.
