  • 1 box Rice-a-Roni, Chicken flavor 6.9 oz
  • 2 cups Cooked chicken, shredded
  • 1 cup Sour cream
  • 1 can Cream of chicken soup 10.5 oz
  • 1/2 cup Milk
  • 1 cup Shredded cheddar cheese
  • 1/2 cup Crushed Ritz crackers or breadcrumbs
  • 2 tablespoons Butter, melted

Instructions

  • Preheat your oven to 350°F (175°C).
  • Prepare the Rice-a-Roni according to package directions, omitting any extra seasoning if desired for less salt.
  • In a large mixing bowl, combine the cooked Rice-a-Roni, shredded chicken, sour cream, cream of chicken soup, milk, and half of the shredded cheddar cheese. Mix until well combined.
  • Spread the mixture evenly into a lightly greased 9x13-inch baking dish.
  • Sprinkle remaining cheddar cheese evenly over the top.
  • In a small bowl, toss together the crushed Ritz crackers (or breadcrumbs) and melted butter until well coated.
  • Sprinkle the cracker mixture evenly over the casserole.
  • Bake uncovered for 25-30 minutes, or until hot and bubbly and the top is golden brown.
  • Let cool for a few minutes before serving for easier slicing.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 4 days. Reheat in the microwave or oven.
