Ingredients

Pasta

  • 8 ounces penne pasta

Vegetables

  • 1 small onion, diced
  • 1/2 cup carrots, diced
  • 1/2 cup peas
  • 1/2 cup corn

Chicken

  • 2 cups cooked chicken, shredded

Seasonings

  • 1 teaspoon dried thyme

Sauce

  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream

Butter

  • 2 tablespoons butter

Instructions

  • Cook the penne pasta according to the package instructions. Once it’s done, drain it and set it aside.
  • In a large skillet, melt the butter over medium heat. Add the diced onion and carrots, and sauté them until they are soft.
  • Stir in the peas, corn, and the shredded cooked chicken. Season with dried thyme, salt, and pepper.
  • Sprinkle the flour over the mixture and stir well to combine. Let it cook for about 1-2 minutes.
  • Gradually pour in the chicken broth and heavy cream while stirring continuously. Bring everything to a simmer, allowing it to thicken for about 5 minutes.
  • Finally, add the cooked pasta to the skillet and stir to coat everything evenly with the creamy sauce. Serve warm and enjoy!

Notes

Feel free to add your favorite veggies, like bell peppers or mushrooms, for extra flavor and nutrition. If you like a bit of spice, consider adding some red pepper flakes to the mixture. Make sure to use cooked chicken for a quicker prep time—rotisserie chicken works great!
