  • 1 lb Chicken tenders
  • 2 tbsp Olive oil
  • 1 cup Rice
  • 2 cups Chicken broth
  • 4 cloves Garlic, minced
  • 1 cup Parmesan cheese, grated
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  • Heat the olive oil in a large skillet over medium heat. Add the chicken tenders, season with salt and pepper, and cook for about 5-7 minutes until golden brown on both sides.
  • Add the minced garlic to the skillet and stir for about 1 minute until fragrant.
  • Add the rice to the skillet, stirring to combine all the ingredients.
  • Slowly pour in the chicken broth while stirring. Bring to a simmer, cover, and reduce heat to low. Cook for 15 minutes or until the rice is fluffy and has absorbed the liquid.
  • Remove from heat and stir in the grated parmesan cheese until melted and creamy.
  • Sprinkle fresh parsley on top and serve warm.

Notes

For a richer flavor, consider using Arborio rice. Store leftovers in an airtight container for up to 3 days.
