Ingredients

Meat

  • 4 pieces cube steaks (about 1 1⁄2 lbs)

Coating

  • 1.25 cups all-purpose flour
  • 0.5 teaspoon Kosher salt
  • 1 teaspoon fresh cracked black pepper
  • 0.25 teaspoon cayenne pepper
  • 0.5 teaspoon paprika
  • 2 pieces eggs beaten
  • 0.5 cup whole milk

Frying Oil

  • as needed vegetable oil for frying

Gravy

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 0.5 teaspoon Kosher salt
  • 1.5 teaspoons fresh cracked black pepper

Instructions

  • Step 1: In a mixing bowl, whisk together the flour, salt, black pepper, cayenne pepper, and paprika. In another bowl, whisk the eggs and milk.
  • Step 2: Dredge each steak in the flour mixture, dip it in the egg mixture, and then dredge it in the flour mixture again. Make sure to cover the steaks evenly and shake off any excess.
  • Step 3: Heat vegetable oil (about 2 inches deep) in a cast iron pan to 350°F (175°C). Fry the steaks for 2-3 minutes per side until they are golden brown. Remove them and rest on a paper towel-lined plate. Cover loosely with foil to keep warm.
  • Step 4: In a pan over medium heat, melt the butter. Stir in the flour and cook for 2-3 minutes until it’s golden brown. Gradually whisk in the milk until the mixture thickens.
  • Step 5: Remove from heat and stir in the salt and pepper.
  • Step 6: Plate the steaks and generously ladle the gravy on top. Serve with mashed potatoes and vegetables for a complete meal. Enjoy!

Notes

For extra crispy steaks, let them rest after breading before frying. Make sure the oil is hot enough before adding the steaks to ensure a crispy outside. You can adjust the seasoning in the gravy to your taste.
