  • 2 cups cooked shredded chicken
  • 1 avocado, diced
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup Ranch dressing
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 large flour tortillas

Instructions

  • In a bowl, mix together the shredded chicken, diced avocado, cheddar cheese, ranch dressing, cilantro, garlic powder, salt, and pepper until evenly combined.
  • Warm the tortillas in a dry skillet for 30 seconds per side to make them pliable.
  • Spoon the chicken mixture into each tortilla. Fold in the sides and roll tightly from the bottom up.
  • Optional: Grill the burritos in the skillet for 1–2 minutes per side until golden and crispy.
  • Slice in half and serve with extra ranch dressing or salsa on the side.

Notes

You can prep the filling in advance and store in the fridge for easy weekday lunches. These are great for meal prep, and freeze well too!
