  • 4 cups cooked chicken, shredded
  • 1 package (6 oz) stuffing mix
  • 1 can (10.75 oz) cream of chicken soup
  • 1 can (10.75 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 1 cup frozen peas and carrots
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the shredded chicken and dry stuffing mix.
  • In another bowl, mix together the cream of chicken soup, cream of mushroom soup, sour cream, milk, melted butter, garlic powder, black pepper, and dried thyme.
  • Add the soup mixture to the chicken and stuffing, mixing until well combined.
  • Fold in the frozen peas and carrots.
  • Transfer the mixture to a greased 9×13 inch baking dish.
  • Bake in the preheated oven for 30-35 minutes, or until the casserole is bubbly and the top is golden brown.
  • Garnish with fresh parsley before serving.

Notes

Use rotisserie chicken for a quicker prep time. Feel free to add extra vegetables like corn or green beans for more color and nutrition. For a crispier top, broil for a few minutes after baking.
