  • 2 cups cooked shredded chicken
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 cup salsa
  • 1 can (10 oz) cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • Oil for brushing

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, Monterey Jack cheese, cheddar cheese, salsa, cream of chicken soup, garlic powder, onion powder, and cumin. Mix well.
  • Place about 1/2 cup of the chicken mixture in the center of each flour tortilla.
  • Fold the sides of the tortilla over the filling, then roll it up tightly.
  • Place the rolled chimichangas seam-side down on a baking sheet. Brush the tops with oil.
  • Bake in the preheated oven for 20-25 minutes or until golden brown and crispy.
  • Serve hot with additional salsa or your favorite toppings.

Notes

For extra crispiness, brush a little more oil on top before baking. You can also use rotisserie chicken for a quicker option.
