Instructions
Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
In a large bowl, combine the shredded coconut, sugar, egg whites, vanilla extract, and salt. Mix well until everything is well combined.
Drop tablespoonfuls of the coconut mixture onto the prepared baking sheet.
Press a cherry half into the center of each macaroon.
Bake for 15-20 minutes or until the edges turn golden brown.
Let them cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
