  • 1.5 cups Shredded Coconut Use sweetened for a sweeter flavor.
  • 0.5 cup Granulated Sugar Adjust based on taste.
  • 2 large Egg Whites
  • 1 teaspoon Vanilla Extract
  • 0.25 teaspoon Salt
  • 12 pieces Maraschino Cherries Halved for topping.

Instructions

  • Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine the shredded coconut, sugar, egg whites, vanilla extract, and salt. Mix well until everything is well combined.
  • Drop tablespoonfuls of the coconut mixture onto the prepared baking sheet.
  • Press a cherry half into the center of each macaroon.
  • Bake for 15-20 minutes or until the edges turn golden brown.
  • Let them cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Notes

Store leftovers in an airtight container at room temperature for 3-4 days or freeze for up to a month.
