Ingredients

Crust Ingredients

  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter, melted

Filling Ingredients

  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 cup cherry pie filling (for topping)
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 325°F (160°C).
  • In a medium bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  • In a large mixing bowl, beat the cream cheese and granulated sugar until smooth.
  • Add the sour cream and vanilla extract, mixing until well combined.
  • Pour the cream cheese filling over the crust in the pan.
  • Bake for 55-60 minutes, or until the center is set.
  • Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours or overnight.
  • Before serving, top with cherry pie filling.

Notes

Make sure the cream cheese is softened for easy mixing. Press the crust down firmly for better texture. Allow the cheesecake to cool completely before refrigerating.
