28ozcan pureed tomatoes or your favorite pasta sauce
16ozbox macaroni noodles
0.5cupcheddar cheese, grated
0.5cupmozzarella cheese, grated
Instructions
In a large pan, heat canola oil. Add diced onions and a pinch of salt; cook until soft.
Add ground beef and cook until browned, breaking it apart as it cooks.
Mix in oregano, garlic, paprika, and pureed tomatoes. Simmer on low for about 1 hour.
Cook macaroni until halfway done. Drain and mix into the beef and sauce mixture.
Stir everything together and season to taste. Optionally mix in some cheese or reserve it all for the top.
Transfer to a baking dish, cover with foil, and either bake immediately or refrigerate for up to 2 days.
When ready to serve, bake at 400°F for 45 minutes (if chilled). Remove foil, sprinkle remaining cheese, and broil until bubbly and golden.
Notes
Customize this casserole with ground turkey, bell peppers, mushrooms, or spinach. Use penne or rotini if desired, and freeze the unbaked dish for up to 3 months.
