Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, combine the cooked rice, steamed broccoli, 1 cup of cheddar cheese, chicken (if using), cream of chicken soup, milk, garlic powder, and onion powder.
Mix well until all ingredients are evenly combined.
Transfer the mixture to a greased 9x13 inch baking dish.
Top with the remaining 1 cup of cheddar cheese.
Bake in the preheated oven for 25-30 minutes or until the cheese is melted and the casserole is heated through.
Let it cool for a few minutes before serving.
Notes
Use bright green, steamed broccoli for the best texture. Leftover chicken or rotisserie chicken makes this even easier. Add red pepper flakes for a little kick!
