  • 2 cups cooked white rice
  • 2 cups fresh broccoli florets, steamed
  • 2 cups shredded cheddar cheese, divided
  • 1 cup cooked chicken breast, shredded (optional)
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the cooked rice, steamed broccoli, 1 cup of cheddar cheese, chicken (if using), cream of chicken soup, milk, garlic powder, and onion powder.
  • Mix well until all ingredients are evenly combined.
  • Transfer the mixture to a greased 9x13 inch baking dish.
  • Top with the remaining 1 cup of cheddar cheese.
  • Bake in the preheated oven for 25-30 minutes or until the cheese is melted and the casserole is heated through.
  • Let it cool for a few minutes before serving.

Notes

Use bright green, steamed broccoli for the best texture. Leftover chicken or rotisserie chicken makes this even easier. Add red pepper flakes for a little kick!
