  • 1 lb thinly sliced beef steak ribeye or sirloin

  • 1 each green bell pepper sliced

  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup shredded provolone cheese

Instructions

  • Cook tortellini according to package instructions until al dente. Drain, toss with olive oil, and set aside.
  • In a skillet, heat olive oil over medium-high heat. Cook beef, onions, and peppers until beef is browned and vegetables are tender. Season with salt and pepper. Set aside.
  • In a saucepan, melt butter over medium heat. Stir in flour to make a roux. Gradually whisk in milk, stirring until thickened. Reduce heat, add provolone cheese, and stir until smooth. Season with salt and pepper.
  • Combine cooked tortellini, cheesesteak filling, and provolone sauce in the skillet. Gently mix and heat through.

Notes

Fresh tortellini gives the best texture, but frozen works well too. Add mushrooms or spinach for extra nutrition. Consider other cheeses like mozzarella or cheddar for variations.
