Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and 2 tsp vanilla extract until fully combined.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into the butter mixture.
Fold in the chocolate chips.
In another bowl, beat the cream cheese with powdered sugar and 1 tsp vanilla extract until smooth.
Flatten a spoonful of cookie dough in your hand, add a spoonful of cheesecake filling, and fold the dough around it to seal.
Place stuffed cookies on the baking sheet and bake for 10–12 minutes or until golden brown around the edges.
Cool for a few minutes on the baking sheet, then transfer to a rack to cool completely.
