  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 2 tsp vanilla extract for cookie dough
  • 1 1/2 cups chocolate chips
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract for cheesecake filling

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and 2 tsp vanilla extract until fully combined.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix into the butter mixture.
  • Fold in the chocolate chips.
  • In another bowl, beat the cream cheese with powdered sugar and 1 tsp vanilla extract until smooth.
  • Flatten a spoonful of cookie dough in your hand, add a spoonful of cheesecake filling, and fold the dough around it to seal.
  • Place stuffed cookies on the baking sheet and bake for 10–12 minutes or until golden brown around the edges.
  • Cool for a few minutes on the baking sheet, then transfer to a rack to cool completely.

Notes

For best results, chill the dough for 30 minutes before baking. You can use mascarpone in place of cream cheese or experiment with flavored cheesecake fillings for variety.
