Ingredients

  • 2 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 0.5 cups Unsalted butter, softened
  • 1 cup Milk
  • 3 large Eggs
  • 2.5 teaspoons Baking powder
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

  • 2 cups Heavy whipping cream
  • 0.25 cups Powdered sugar
  • 1 teaspoon Vanilla extract
  • to taste Fresh berries (for topping) Optional

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the milk. Mix until just combined.
  • Pour the batter evenly into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  • While the cakes cool, prepare the frosting by whipping the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Once the cakes are fully cooled, spread frosting on top of one layer, place the second layer on top, and frost the top and sides. Decorate with fresh berries if desired.

Notes

For best results, use chilled heavy cream for frosting and avoid overmixing the batter to keep the cake light and airy.
