Instructions
Step 1: In a large mixing bowl, beat together the ricotta cheese and mascarpone (or cream cheese) until smooth and well-blended.
Step 2: Mix in the powdered sugar, vanilla extract, and cinnamon (if using). Continue beating until fully combined and creamy.
Step 3: Gently fold in 1 cup of mini chocolate chips, reserving the remaining 1/4 cup for topping.
Step 4: Spoon the filling into the pre-made graham cracker crust, smoothing the top with a spatula.
Step 5: Sprinkle the remaining mini chocolate chips on top. Refrigerate for at least 4 hours or overnight until fully set.
Step 6: Slice, serve cold, and top each slice with whipped topping if desired.
Notes
For best results, chill overnight. Use high-quality ricotta and avoid overmixing for a perfect texture.
