  • 3/4 cup granulated sugar

  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Mix in the ricotta cheese, egg, and vanilla extract until well combined.
  • In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Gradually add the dry mixture to the wet mixture. Stir until just combined; do not overmix.
  • Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, leaving some space between each cookie.
  • Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For extra flavor, add mini chocolate chips or chopped pistachios to the batter. Store in an airtight container at room temperature for up to a week or freeze for up to 3 months.
