Instructions
In a large skillet over medium heat, cook the ground chicken until fully browned, breaking it apart with a wooden spoon (about 5–7 minutes).
Stir in the diced red onions and canned corn, sautéing for about 2–3 minutes until the onions are soft and fragrant.
Add the condensed cream of chicken soup, Cajun seasoning, onion powder, salt, and pepper to the skillet. Mix well, allowing the mixture to warm through (about 3–5 minutes).
Reduce heat to low and stir in the mayonnaise until creamy and well-combined.
Spoon the Cajun chicken mixture onto the bottom halves of the hamburger buns. Top with a generous handful of shredded cheese.
Place the assembled Sloppy Joes under the broiler for 2–3 minutes, just until the cheese is melted and bubbly.
