  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups cabbage, chopped
  • 2 medium carrots, peeled and sliced
  • 2 stalks celery, sliced
  • 1 medium bell pepper, chopped
  • 1 can diced tomatoes (14.5 ounces)
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup parsley, chopped

Instructions

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onion and minced garlic. Sauté until the onion becomes translucent.
  • Add the chopped cabbage, sliced carrots, celery, and bell pepper. Cook for about 5-7 minutes until the vegetables start to soften.
  • Pour in the diced tomatoes and the broth.
  • Stir in the dried thyme and basil.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until all the vegetables are tender.
  • Season with salt and pepper according to your taste.
  • Stir in the chopped parsley just before serving.
  • Serve hot and enjoy!

Notes

- Feel free to add any other vegetables you like, such as potatoes or green beans. - Adjust the seasonings to your liking. If you enjoy a bit of heat, add some red pepper flakes! - For a heartier version, you can add cooked sausage or beans. - Try making a creamy version by adding a splash of cream or milk just before serving.
