  • 4 slices Rustic sourdough or Italian bread
  • 1 cup Cherry tomatoes
  • 1 tablespoon Olive oil plus more for drizzling
  • 1 ball Burrata cheese or 1/2 cup torn burrata
  • to taste Salt
  • to taste Freshly cracked black pepper
  • to taste Fresh basil leaves
  • to taste Balsamic glaze store-bought or homemade

Instructions

  • Preheat your oven (or a grill pan) to medium-high. Lightly brush each slice of bread with olive oil on both sides.
  • Toast the bread slices for 2-3 minutes on each side, until golden brown and crisp. Remove and set aside.
  • While the bread is toasting, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the cherry tomatoes and let them cook for 3-4 minutes, stirring occasionally, until they start to blister and split. Sprinkle with a pinch of salt and pepper.
  • Place the toasted bread on a serving platter. Gently break open the ball of burrata and spread the creamy cheese evenly over each slice.
  • Spoon the warm, blistered tomatoes over the burrata-topped bread.
  • Finish with a generous sprinkle of freshly cracked black pepper, a few torn basil leaves, and a drizzle of balsamic glaze.
  • Serve immediately while the tomatoes are warm and the bread is crisp.

Notes

Bruschetta is best enjoyed fresh. Store components separately if you have leftovers. Toasted bread can be kept at room temperature for up to one day, while tomatoes and burrata should be refrigerated for up to two days.
