  • 1 fresh baguette Baguette Sliced into 1/2-inch thick pieces
  • 8 oz Burrata cheese Torn into pieces
  • 2 cups Cherry tomatoes Diced
  • 1/4 cup Fresh basil leaves Chopped
  • 2 tablespoons Extra-virgin olive oil
  • 1/2 teaspoon Sea salt
  • 1/4 teaspoon Freshly cracked black pepper
  • 2 tablespoons Balsamic glaze

Instructions

  • Preheat your oven to 425°F (220°C). Arrange the baguette slices on a baking sheet in a single layer.
  • Brush each slice lightly with extra-virgin olive oil on both sides. Toast the bread in the oven for 5-7 minutes, flipping once halfway through, until both sides are golden and crisp.
  • While the bread is toasting, dice the cherry tomatoes and chop the fresh basil. In a bowl, toss the tomatoes with the basil, the remaining olive oil, sea salt, and black pepper to combine.
  • Once the baguette slices are toasted, let them cool for one minute. Then, top each slice with a generous spoonful of the tomato-basil mixture.
  • Tear the burrata cheese into small pieces and place on top of the tomatoes. Don’t worry if it’s messy—the creamy cheese is meant to tumble and ooze over the sides!
  • Drizzle each bruschetta generously with balsamic glaze.
  • Sprinkle a little extra fresh basil and cracked black pepper on top, if desired. Serve immediately while the bread is still warm and crunchy.

Notes

For the best flavor, use ripe, in-season cherry tomatoes and quality burrata. Assemble just before serving to maintain that perfect crispiness.
