Instructions
Preheat your oven to 425°F (220°C). Arrange the baguette slices on a baking sheet in a single layer.
Brush each slice lightly with extra-virgin olive oil on both sides. Toast the bread in the oven for 5-7 minutes, flipping once halfway through, until both sides are golden and crisp.
While the bread is toasting, dice the cherry tomatoes and chop the fresh basil. In a bowl, toss the tomatoes with the basil, the remaining olive oil, sea salt, and black pepper to combine.
Once the baguette slices are toasted, let them cool for one minute. Then, top each slice with a generous spoonful of the tomato-basil mixture.
Tear the burrata cheese into small pieces and place on top of the tomatoes. Don’t worry if it’s messy—the creamy cheese is meant to tumble and ooze over the sides!
Drizzle each bruschetta generously with balsamic glaze.
Sprinkle a little extra fresh basil and cracked black pepper on top, if desired. Serve immediately while the bread is still warm and crunchy.
Notes
For the best flavor, use ripe, in-season cherry tomatoes and quality burrata. Assemble just before serving to maintain that perfect crispiness.
