Instructions
Preheat your oven to 400 degrees F (200 degrees C). Arrange the bread slices evenly on a baking sheet.
Brush each bread slice lightly with olive oil on both sides. Toast in the oven for 7-9 minutes until golden brown and crisp, flipping halfway through for even toasting.
While the bread is toasting, halve the cherry tomatoes and toss them with a sprinkle of salt, black pepper, and a drizzle of olive oil in a small bowl. Let them marinate for a few minutes.
Once your bread is toasted, remove it from the oven and let it cool for a minute.
Tear or slice the burrata cheese and gently spoon it onto the center of each toasted bread slice. If using ricotta, spread a generous layer on each.
Top the cheese with a spoonful of the marinated cherry tomatoes. Sprinkle fresh basil over everything and finish with another light drizzle of olive oil. Add a pinch of red pepper flakes for a little heat, if desired.
Serve your Burrata Bruschetta immediately while the bread is still warm and the toppings are fresh.
