  • 1 loaf Baguette or sourdough bread sliced into 1/2-inch pieces
  • 1 ball Fresh burrata cheese or fresh ricotta as an alternative
  • 1 cup Cherry tomatoes halved
  • 2 tablespoons Extra virgin olive oil plus more for drizzling
  • 1/4 cup Fresh basil chopped or whole leaves
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Freshly ground black pepper
  • 1 pinch Red pepper flakes optional

Instructions

  • Preheat your oven to 400 degrees F (200 degrees C). Arrange the bread slices evenly on a baking sheet.
  • Brush each bread slice lightly with olive oil on both sides. Toast in the oven for 7-9 minutes until golden brown and crisp, flipping halfway through for even toasting.
  • While the bread is toasting, halve the cherry tomatoes and toss them with a sprinkle of salt, black pepper, and a drizzle of olive oil in a small bowl. Let them marinate for a few minutes.
  • Once your bread is toasted, remove it from the oven and let it cool for a minute.
  • Tear or slice the burrata cheese and gently spoon it onto the center of each toasted bread slice. If using ricotta, spread a generous layer on each.
  • Top the cheese with a spoonful of the marinated cherry tomatoes. Sprinkle fresh basil over everything and finish with another light drizzle of olive oil. Add a pinch of red pepper flakes for a little heat, if desired.
  • Serve your Burrata Bruschetta immediately while the bread is still warm and the toppings are fresh.

Notes

For the best results, assemble just before serving to keep the bread crisp.
