Ingredients

Potatoes

  • 1.5 lbs baby potatoes Washed and halved
  • 1/2 cup unsalted butter Melted until browned
  • 1/4 cup grated Parmesan cheese For topping
  • 3 cloves garlic Minced
  • 1 tablespoon fresh thyme or rosemary Chopped
  • to taste Salt
  • to taste Pepper

Garnish

  • Fresh parsley For garnish

Instructions

  • Preheat the oven to 425°F (220°C).
  • Wash and halve the baby potatoes.
  • In a saucepan, melt the butter over medium heat until it starts to brown and has a nutty aroma.
  • Toss the potatoes in the browned butter, garlic, thyme or rosemary, salt, and pepper.
  • Spread the potatoes in a single layer on a baking sheet.
  • Roast in the preheated oven for about 25-30 minutes, turning halfway through, until golden and crispy.
  • Remove from the oven and sprinkle with Parmesan cheese.
  • Garnish with fresh parsley and serve warm.

Notes

For extra crispiness, avoid overcrowding the baking sheet. Try adding a pinch of paprika or chili powder for a flavor twist!
