  • 4 cups chopped broccoli florets
  • 1 large onion, chopped
  • 2 medium carrots, peeled and sliced
  • 3 cups chicken or vegetable broth
  • 2 cups cheddar cheese, grated
  • 1 cup cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste

Instructions

  • In a large pot, melt the butter over medium heat.
  • Add the onions and carrots, and sauté until the onions are translucent.
  • Sprinkle the flour over the vegetables, stir to coat them, and cook for another minute to remove the raw flour taste.
  • Slowly add the chicken or vegetable broth while whisking constantly to avoid lumps.
  • Add the chopped broccoli and bring it to a boil. Then, reduce the heat and let it simmer until the broccoli is tender, about 20 minutes.
  • Use an immersion blender to puree the soup until smooth (or blend in batches with a regular blender).
  • Stir in the cream and bring the soup back to a gentle simmer.
  • Add the grated cheddar cheese and stir until melted and smooth.
  • Season with salt and pepper. Serve hot.

Notes

- For extra flavor, you can add garlic while sautéing the onions and carrots.
- Make sure to constantly whisk the broth when adding it to avoid lumps.
- If you like a thicker soup, let it simmer longer after blending.
- You can easily add other veggies like cauliflower or spinach to this soup for more flavor and nutrients.
