Ingredients

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Wet Ingredients

  • 1 cup whole milk
  • 0.25 cups unsalted butter, melted
  • 2 large eggs

Mix-ins

  • 1 cup cheddar cheese, shredded
  • 1 cup broccoli florets, blanched and chopped
  • 0.25 cups parmesan cheese, grated

Instructions

  • Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a large bowl, combine flour, baking powder, salt, and pepper.
  • In another bowl, whisk together milk, melted butter, and eggs.
  • Stir wet ingredients into dry until just mixed. Fold in cheddar cheese and broccoli.
  • Spoon batter into muffin cups and sprinkle with parmesan cheese.
  • Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
  • Let muffins cool slightly before serving warm.
