Instructions
Slow-cook the brisket in a saucepan over low heat. Pour bourbon and maple syrup over the meat and simmer for 45 minutes, stirring occasionally until tender.
Toast store-bought waffles lightly so they’re warm and slightly crispy.
Butter one side of each bread slice and waffle. These will be the exterior grilling surfaces.
On the unbuttered side of the bread, layer cheddar cheese, then shredded brisket, and more cheese if desired.
Place a waffle slice over the brisket and close the sandwich with another buttered slice of bread (buttered side out).
Heat a skillet over medium heat. Grill each sandwich for 3–4 minutes per side, pressing gently, until golden and cheese is melted.
Slice and serve warm.
