  • 1 lb Brisket Slow-cooked or leftover brisket works best.
  • 1 cup Bourbon Can substitute with apple juice for an alcohol-free option.
  • 1/2 cup Maple Syrup
  • 8 slices Bread Sturdy bread works best.
  • 2 cups Shredded Cheddar Cheese Sharp cheddar is recommended.
  • 4 pieces Waffles Store-bought or homemade.
  • to taste Butter For grilling and spreading.

Instructions

  • Slow-cook the brisket in a saucepan over low heat. Pour bourbon and maple syrup over the meat and simmer for 45 minutes, stirring occasionally until tender.
  • Toast store-bought waffles lightly so they’re warm and slightly crispy.
  • Butter one side of each bread slice and waffle. These will be the exterior grilling surfaces.
  • On the unbuttered side of the bread, layer cheddar cheese, then shredded brisket, and more cheese if desired.
  • Place a waffle slice over the brisket and close the sandwich with another buttered slice of bread (buttered side out).
  • Heat a skillet over medium heat. Grill each sandwich for 3–4 minutes per side, pressing gently, until golden and cheese is melted.
  • Slice and serve warm.

Notes

This sandwich pairs beautifully with crispy sweet potato fries, a fresh salad with vinaigrette, or creamy coleslaw. A cold craft beer or sparkling apple cider balances the sweet and smoky notes.
