Instructions
In a large mixing bowl, add the softened cream cheese and sour cream. Use a hand mixer or sturdy spatula to blend until smooth and creamy.
Add the drained Rotel tomatoes, ranch seasoning mix, and shredded cheddar cheese. Stir until everything is evenly combined.
Fold in the diced jalapeños (if using), green onions, and cilantro. Taste and adjust seasoning if desired—for extra heat, add more jalapeños!
Cover the bowl and chill in the refrigerator for at least 30 minutes. This allows the flavors to meld and the dip to thicken.
Serve Boat Dip cold with tortilla chips, crackers, or sturdy veggie sticks. Garnish with extra green onions or cilantro for a fresh finish.
Store any leftovers in an airtight container in the fridge.
Notes
For a lighter version, swap in Greek yogurt for some (or all) of the sour cream. Don't skip the chill time to allow flavors to bloom.
