  • 1 can (10 oz) Rotel tomatoes, drained
  • 1 cup sour cream
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 1/4 cup diced jalapeños (optional)
  • 1/4 cup chopped green onions
  • 2 tablespoons chopped cilantro (optional)
  • Tortilla chips or crackers for serving

Instructions

  • In a large mixing bowl, add the softened cream cheese and sour cream. Use a hand mixer or sturdy spatula to blend until smooth and creamy.
  • Add the drained Rotel tomatoes, ranch seasoning mix, and shredded cheddar cheese. Stir until everything is evenly combined.
  • Fold in the diced jalapeños (if using), green onions, and cilantro. Taste and adjust seasoning if desired—for extra heat, add more jalapeños!
  • Cover the bowl and chill in the refrigerator for at least 30 minutes. This allows the flavors to meld and the dip to thicken.
  • Serve Boat Dip cold with tortilla chips, crackers, or sturdy veggie sticks. Garnish with extra green onions or cilantro for a fresh finish.
  • Store any leftovers in an airtight container in the fridge.

Notes

For a lighter version, swap in Greek yogurt for some (or all) of the sour cream. Don't skip the chill time to allow flavors to bloom.
