Instructions

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, beat the egg yolks until pale and fluffy. Stir in the blended cottage cheese.
  • In another bowl, beat the egg whites with the cream of tartar until stiff peaks form.
  • Gently fold the egg whites into the cottage cheese mixture until just combined.
  • If using, mix in the salt and cornstarch.
  • Drop spoonfuls of the mixture onto the prepared baking sheet, shaping them into clouds.
  • Bake for 25-30 minutes or until golden brown.
  • Let cool slightly before serving.

Notes

Blend the cottage cheese well for a smooth texture. Be gentle when folding in the egg whites to keep the mixture light and fluffy. Try adding cinnamon or lemon zest for extra flavor!
