  • 1/2 cup rolled oats
  • 1/2 cup fresh blueberries
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix together the cottage cheese, rolled oats, fresh blueberries, eggs, honey or maple syrup, cinnamon, and vanilla extract until well combined.
  • Pour the mixture into a greased baking dish.
  • Bake in the preheated oven for about 25-30 minutes or until the edges are golden brown and the center is set.
  • Allow to cool slightly before slicing and serving.

Notes

Use fresh blueberries for the best flavor. If using frozen, do not thaw them before adding. For extra sweetness, add more honey or maple syrup to taste. Sprinkle some nuts on top before baking for added crunch!
