Instructions
Preheat your Blackstone griddle or a large skillet over medium-high heat.
Add the ground beef to the griddle and cook, breaking it up with a spatula, until browned. Stir in the taco seasoning and cook for another 2-3 minutes until well combined and heated through. Remove from heat and set aside.
Lay out four tortillas on a clean surface. Spread a thin layer of ketchup, mustard, and mayonnaise on each tortilla. Evenly distribute the cooked ground beef over the tortillas. Sprinkle shredded cheddar cheese, diced tomatoes, diced onions, sliced pickles, and shredded lettuce over the beef. Top each with another tortilla to create a quesadilla.
Preheat the griddle or skillet over medium heat and add a bit of butter or oil. Cook the quesadillas one or two at a time for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted. Carefully remove the quesadillas from the griddle and let them cool for a minute before cutting them into wedges.
Serve the cheeseburger quesadillas warm, with additional ketchup, mustard, and mayonnaise on the side for dipping if desired.
