Ingredients

Chicken

  • 2 pieces boneless, skinless chicken breasts

Seasoning

Salad Base

  • 6 cups mixed greens (spinach, arugula, romaine)

Fruits

  • 1 cup fresh blackberries

Dressing

Instructions

  • Season the chicken breasts with salt and pepper on both sides.
  • Preheat your grill to medium-high heat. Place the seasoned chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and allow it to rest for a few minutes before slicing.
  • While the chicken is grilling, wash and dry your mixed greens. In a large bowl, toss the greens together for an even mix.
  • Gently fold in the fresh blackberries with the greens.
  • After the chicken has rested, slice it into strips and place it atop the salad.
  • Drizzle with balsamic vinaigrette to taste, and sprinkle optional nuts over the top, adding a delightful crunch.
  • Serve immediately and enjoy the fresh flavors of your salad!

Notes

For better flavor, marinate the chicken for at least 30 minutes or up to overnight before grilling. This recipe is naturally gluten-free!
