For the Cake
1boxwhite cake mix18.25 oz
1boxstrawberry-flavored instant gelatin3 oz
1packagefrozen strawberries in syrup15 oz, thawed and pureed
4largeeggs
1/2cupvegetable oil
1/4cupwater
For the Strawberry Cream Cheese Frosting
1/4cupbuttersoftened
1packagecream cheese8 oz, softened
1packagefrozen strawberries in syrup10 oz, thawed and pureed
1/2tspstrawberry extract
7cupsconfectioners’ sugar

Instructions
Preheat oven to 350°F. Lightly grease and flour two 9-inch round cake pans.
In a large bowl, combine white cake mix and strawberry gelatin. Add pureed strawberries, eggs, vegetable oil, and water. Beat with an electric mixer at medium speed until smooth.
Divide batter evenly between prepared pans. Bake for 20 minutes or until a toothpick inserted comes out clean.
Cool cakes in pans for 10 minutes, then remove to wire racks to cool completely.
For the frosting, beat butter and cream cheese until creamy. Mix in 1/4 cup of strawberry puree and strawberry extract. Gradually add confectioners’ sugar and beat until fluffy.
Spread frosting between cake layers and over top and sides. Garnish with fresh strawberries if desired.
Notes
To use fresh strawberries, macerate with a little sugar and puree before adding. This cake is best served chilled and keeps well for up to 4 days in the fridge.
