Instructions
Preheat the oven to 350°F (175°C).
In a bowl, combine crushed graham crackers and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
Bake for 10 minutes and then allow to cool.
In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
Fold in the whipped cream until well combined.
Pour the cream cheese mixture over the cooled crust.
Refrigerate for at least 4 hours or until set.
Serve chilled, topped with fresh strawberries if desired.
Notes
For best results, let the cheesecake chill for at least 4 hours. You can also add blueberries or raspberries for extra flavor.
