  • 2 cups cooked chicken, shredded
  • 1/2 cup BBQ sauce your favorite kind
  • 4 large tortillas flour tortillas work best
  • 1 cup shredded cheese cheddar, Monterey Jack, or a blend
  • to taste Fresh cilantro, chopped
  • as needed Olive oil or cooking spray for the pan

Instructions

  • In a mixing bowl, toss the shredded chicken with the BBQ sauce until evenly coated.
  • Lay out the tortillas. On one half of each tortilla, spread a generous layer of the BBQ chicken mixture.
  • Sprinkle shredded cheese on top of the chicken, then add a pinch of chopped fresh cilantro for a burst of freshness.
  • Fold the tortillas in half to seal in the filling.
  • Heat a large skillet over medium heat and lightly brush with olive oil or spray with cooking spray.
  • Place the folded quesadillas in the skillet (work in batches if need be). Cook for about 2-3 minutes per side, or until the tortillas are golden and crispy and the cheese has fully melted.
  • Remove from the pan, cut into wedges, and serve hot.

Notes

Store leftovers wrapped in foil or in an airtight container. They’ll stay fresh in the fridge for up to three days.
