  • 3 pieces Ripe Bananas Mashed
  • 1 cup Sugar
  • 1/2 cup Butter Softened
  • 2 pieces Eggs
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Chopped Pecans

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and set aside.
  • In a mixing bowl, mash the ripe bananas until smooth; set aside.
  • In another bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Blend in the vanilla extract and mashed bananas.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  • Gently fold in the chopped pecans.
  • Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days. For longer storage, freeze slices wrapped tightly in plastic wrap.
