  • 3 pieces ripe bananas, mashed Use very ripe bananas for the best flavor.
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  • In a bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, then stir in the mashed bananas, sour cream, and vanilla.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add to the banana mixture until just combined.
  • Pour batter into the prepared pan. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  • Allow to cool completely before frosting.
  • For the frosting, beat together cream cheese and powdered sugar until smooth. Frost the cooled cake and enjoy!

Notes

Store any leftover cake in an airtight container in the refrigerator. It will stay fresh for up to five days. You can also freeze the cake for up to three months.
