  • 1 cup mashed bananas (about 3 bananas)

  • 1/2 cup butter, softened
  • 1 bar (8 oz) cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar
  • 2 tablespoons heavy whipping cream

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.
  • In a large bowl, cream together butter and sugar using a mixer until light and fluffy.
  • Add eggs, sour cream, and vanilla extract. Mix until smooth.
  • Gradually add flour, baking soda, and salt, mixing on low speed until just combined.
  • Gently stir in mashed bananas until fully incorporated.
  • Pour batter into the prepared baking dish and spread evenly.
  • Bake for 25-35 minutes, or until a toothpick inserted in the center comes out with moist crumbs. Let cool completely.
  • For the frosting: In a large bowl, beat together butter and cream cheese until smooth. Add vanilla extract, powdered sugar, and heavy cream, and mix until frosting is thick and creamy.
  • Once the cake is completely cool, spread the frosting evenly over the top.
  • Slice and serve, optionally garnishing with banana slices or chopped nuts.

Notes

For added texture, mix in chopped walnuts or chocolate chips into the batter. Store in the fridge for up to 5 days, or freeze the unfrosted cake for up to 3 months.
