Equipment

  • Jelly Roll Pan
  • Mixing Bowl
  • Saucepan

Ingredients

For the Brownies

  • 1.5 cups sugar
  • 1 cup sour cream
  • 0.5 cup butter, softened
  • 2 units eggs
  • 1.75 cups mashed ripe bananas (about 3 to 4 bananas)
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.75 teaspoon salt

Optional Ingredients

  • 0.5 cup chopped walnuts (optional)

For the Brown Butter Frosting

  • 0.5 cup butter
  • 4 cups powdered sugar
  • 1.5 teaspoons vanilla extract
  • 3 tablespoons milk

Instructions

  • Preheat oven to 375°F. Grease and flour a 15x10-inch jelly roll pan.
  • In a large bowl, beat together sugar, sour cream, butter, and eggs until creamy.
  • Blend in mashed bananas and vanilla extract.
  • Add flour, baking soda, and salt. Mix until combined. Fold in walnuts if using.
  • Spread batter evenly in the prepared pan. Bake for 20–25 minutes, until golden and a toothpick comes out clean.
  • While the bars bake, prepare the frosting. Melt butter in a saucepan over medium heat until it begins to brown. Remove from heat.
  • Add powdered sugar, vanilla, and milk to the browned butter. Whisk until smooth and spreadable.
  • Spread frosting over warm bars. Let cool before slicing and serving.

Notes

Use very ripe bananas for best flavor. Greek yogurt can substitute sour cream. Frost while warm for a smooth spread. Store leftovers covered at room temp or refrigerated.
