  • 2 pieces Ripe bananas, mashed
  • 1 cup Rolled oats
  • 1/2 cup Blueberries
  • 1/4 cup Honey or maple syrup
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Cinnamon
  • 1 pinch Salt

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, mash the bananas, then stir in the rolled oats, blueberries, honey or maple syrup, vanilla extract, cinnamon, and salt. Mix until well combined.
  • Drop spoonfuls of the mixture onto the prepared baking sheet and gently flatten into cookie shapes.
  • Bake for 15-18 minutes or until the edges turn golden brown.
  • Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  • Enjoy fresh or store for later!

Notes

Store in an airtight container at room temperature for up to a week, or refrigerate for longer freshness. To freeze, wrap each cookie individually and store for up to 3 months. For added crunch, try mixing in chopped nuts or chia seeds!
