  • 1 lb Carrots, peeled and cut into sticks or left whole if thin
  • 1.5 tablespoons Olive oil
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Honey or maple syrup
  • 1 teaspoon Fresh thyme leaves optional

Instructions

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • In a large bowl, toss carrots with olive oil, salt, and black pepper.
  • Spread the carrots in a single layer on the baking sheet.
  • Roast for 20–25 minutes, turning once halfway through.
  • Meanwhile, whisk together balsamic vinegar and honey (or maple syrup).
  • Drizzle the glaze over carrots during the last 5 minutes of roasting and toss to coat.
  • Return to the oven and roast until glossy and caramelized.
  • Sprinkle with fresh thyme if desired and serve warm.

Notes

Try adding parsnips or sweet potatoes for variety. For a vegan option, use maple syrup instead of honey. Be sure not to overcrowd the pan for optimal roasting.
