4slicesartisan breadsourdough, ciabatta, or rustic white
2tablespoonsunsalted buttersoftened
1cupfresh blackberries
1tablespoonbalsamic glaze
1teaspoonhoney
4ouncesbrie cheesesliced
2ouncesgoat cheeseoptional, for extra tang
1tablespoonfresh basilchopped
1/4teaspoonblack pepper
Instructions
In a small bowl, gently mash the blackberries with a fork. Stir in balsamic glaze, honey, and black pepper. Let sit for a few minutes to release juices.
Butter one side of each bread slice. On the unbuttered sides, layer brie slices (and goat cheese, if using). Spoon the blackberry mixture over the cheese and sprinkle fresh basil on top.
Close the sandwiches with the buttered sides facing out. Heat a skillet over medium heat. Cook each sandwich for 3–5 minutes per side, gently pressing down, until golden brown and the cheese is melted.
Let rest for a minute, then slice and serve warm. Enjoy the irresistible cheese pull!
Notes
Use room temperature butter for even spreading and crispier bread. You can substitute brie with Camembert, fontina, or Monterey Jack.
