Ingredients

Meatball Ingredients

  • 1 lb salmon fillet, skin removed and finely chopped
  • 1/2 cup breadcrumbs
  • 1 large egg, lightly beaten
  • 2 tbsp fresh parsley, chopped
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • to taste salt and pepper
  • 1 tbsp olive oil (for baking)

Creamy Avocado Sauce Ingredients

  • 1 ripe avocado
  • 1/4 cup sour cream
  • 1 tbsp lemon juice
  • 1 clove garlic, minced

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or grease lightly with oil.
  • In a bowl, combine chopped salmon, breadcrumbs, egg, parsley, garlic powder, paprika, salt, and pepper. Mix until well combined.
  • Roll mixture into meatballs and place on the prepared baking sheet. Leave space between each ball.
  • Drizzle with olive oil and bake for 12–15 minutes or until golden and cooked through.
  • While baking, blend avocado, sour cream, lemon juice, garlic, salt, and pepper until creamy.
  • Drizzle avocado sauce over the warm salmon meatballs and serve immediately.

Notes

For more flavor, add lime zest or swap parsley for cilantro. You can prep the meatballs in advance and refrigerate until ready to bake. Leftovers store well in the fridge or freezer.
