Ingredients

Zucchini

  • 2 medium Zucchini, grated

Cheese

  • 1 cup Shredded mozzarella cheese
  • ½ cup Grated Parmesan cheese

Eggs

  • 2 large Eggs Lightly beaten

Bread Crumbs

  • 1 cup Bread crumbs

Spices

  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 2 tablespoons Fresh herbs, chopped Optional

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.
  • In a large bowl, combine the grated zucchini, mozzarella, Parmesan, eggs, bread crumbs, garlic powder, onion powder, salt, pepper, and herbs. Mix until well incorporated.
  • Form the mixture into small bite-sized balls and place them on the prepared baking sheet.
  • Bake for 20-25 minutes, or until golden brown and crispy. Serve hot.

These bites can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
