2cupsBroccoli florets, finely choppedSteamed briefly or raw, then finely chopped
1cupShredded cheddar cheesePacked, sharp cheddar works great
1/2cupBreadcrumbsPlain or seasoned
2largeEggsBeaten, room temperature preferred
1/4cupAll-purpose flour
1teaspoonGarlic powder
1/2teaspoonSalt
1/4teaspoonBlack pepper
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
If using raw broccoli, pulse florets in a food processor or chop finely. You can also lightly steam the broccoli for 2 minutes and drain well.
In a large bowl, combine the chopped broccoli, shredded cheddar cheese, breadcrumbs, beaten eggs, flour, garlic powder, salt, and black pepper. Mix thoroughly.
Scoop the mixture by the tablespoonful and roll it into compact balls.
Place the balls on the prepared baking sheet, spacing them about 1 inch apart.
Bake for 18–20 minutes, or until golden brown and crisp.
Remove from the oven and let cool for 2–3 minutes before serving.
Notes
Store leftovers in an airtight container for up to 3 days. Freeze for up to 2 months.
