Ingredients

Dry Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves

Wet Ingredients

  • 2 cups unsweetened applesauce
  • 2 large eggs, room temperature
  • 1 cup vegetable oil
  • 0.75 cup granulated sugar
  • 0.75 cup light brown sugar
  • 1.5 teaspoons vanilla extract
  • 0.75 cup chopped walnuts or pecans (optional)

Frosting Ingredients

  • 1 cup unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 0.5 teaspoon ground cinnamon
  • 1.5 teaspoons vanilla extract
  • 3.5 cups powdered sugar

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking dish.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves until well combined.
  • In a large bowl, combine the applesauce, eggs, vegetable oil, granulated sugar, light brown sugar, and vanilla extract. Mix until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until combined.
  • If desired, fold in walnuts or pecans.
  • Pour the batter into the prepared baking dish and smooth the top.
  • Bake for 30-35 minutes, or until a toothpick comes out clean.
  • Let the cake cool in the pan on a wire rack before frosting.
  • For the frosting, beat together the butter, cream cheese, cinnamon, and vanilla until fluffy. Gradually add powdered sugar until smooth.
  • Spread the frosting over the cooled cake and chill slightly before serving.

Notes

Store leftovers in the refrigerator for up to 4 days. Can freeze slices for up to 2 months.
