Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or a 9-inch round cake pan with cooking spray or a bit of butter.
In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until evenly combined.
In another bowl, mix the applesauce, brown sugar, oil (or melted butter), eggs, and vanilla extract. Whisk until smooth and creamy.
Add the wet ingredients to the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Be careful not to over-mix.
If using, fold in the chopped nuts and raisins (or dried cranberries) until evenly distributed.
Pour the batter into the prepared pan, smoothing the top with a spatula. Tap the pan gently on the counter to remove any air bubbles.
Bake in preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 15-20 minutes, then transfer to a wire rack to cool completely before serving.
Dust with powdered sugar or add your favorite frosting if desired, slice, and enjoy!
Notes
For added depth of flavor, try using dark brown sugar or adding a teaspoon of orange zest to the batter.
