Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves

Wet Ingredients

  • 1 cup unsweetened applesauce
  • 3/4 cup brown sugar
  • 1/2 cup vegetable oil (or melted butter)
  • 2 large eggs
  • 1 teaspoon vanilla extract

Optional Add-ins

  • 1/2 cup chopped walnuts or pecans optional
  • 1/2 cup raisins or dried cranberries optional

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or a 9-inch round cake pan with cooking spray or a bit of butter.
  • In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until evenly combined.
  • In another bowl, mix the applesauce, brown sugar, oil (or melted butter), eggs, and vanilla extract. Whisk until smooth and creamy.
  • Add the wet ingredients to the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Be careful not to over-mix.
  • If using, fold in the chopped nuts and raisins (or dried cranberries) until evenly distributed.
  • Pour the batter into the prepared pan, smoothing the top with a spatula. Tap the pan gently on the counter to remove any air bubbles.
  • Bake in preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 15-20 minutes, then transfer to a wire rack to cool completely before serving.
  • Dust with powdered sugar or add your favorite frosting if desired, slice, and enjoy!

Notes

For added depth of flavor, try using dark brown sugar or adding a teaspoon of orange zest to the batter.
