For the Pudding
8cupsBread, cubed (preferably dry or day-old)
3mediumApples, peeled, cored, and chopped
4largeEggs
1cupVanilla yogurt
1cupMilk
2tspCinnamon (divided)
1/2tspNutmeg
1/2cupSugar + 2 tbsp (divided)
1/2cupRaisins
For the Sauce
1cupUnsalted butter
1cupHeavy cream
1cupBrown sugar
Instructions
Preheat oven to 350°F and grease a 9x13-inch baking dish.
In a large bowl, whisk together yogurt, milk, eggs, 1 tsp cinnamon, nutmeg, and 1/2 cup sugar.
Add chopped apples and raisins. Fold in the bread cubes until evenly coated. Pour into the baking dish.
Mix remaining 2 tbsp sugar with 1 tsp cinnamon and sprinkle over the top.
Bake for 30–40 minutes, or until puffed and golden brown.
Meanwhile, in a saucepan over medium-low heat, combine butter, heavy cream, and brown sugar. Bring to a boil, then reduce and simmer 5 minutes.
Drizzle warm caramel sauce over individual servings. Serve with vanilla ice cream if desired.
Notes
Best with tart apples like Granny Smith. Can be made ahead and baked the next morning. Sauce can be doubled for extra indulgence.
