  • 1 can (21 ounce) apple pie filling mashed slightly, room temperature
  • 1 box (15.25 ounce) yellow cake mix recommended
  • 4 large eggs lightly beaten, room temperature
  • 1 cup self-rising flour sifted if lumpy
  • 1 tablespoon ground cinnamon for batter
  • 1 medium apple chopped small, about 1 cup; peeled or unpeeled as preferred
  • 1/2 cup granulated sugar for topping
  • 1 1/2 teaspoons ground cinnamon for topping

Instructions

  • Preheat the oven to 325°F (165°C). Grease two standard 9×5-inch loaf pans with butter or nonstick spray and line with parchment if desired for easy removal.
  • In a large mixing bowl, whisk together the yellow cake mix, self-rising flour, and 1 tablespoon of cinnamon until evenly combined and free of lumps.
  • Stir in the mashed apple pie filling and the lightly beaten eggs. Mix until just combined — do not overmix or the bread will become dense.
  • Gently fold in the chopped apple pieces with a rubber spatula so they are evenly distributed through the batter.
  • Divide the batter evenly between the two prepared loaf pans, smoothing the tops with a spatula.
  • In a small bowl, combine 1/2 cup sugar and 1 1/2 teaspoons cinnamon. Sprinkle this mixture evenly over the tops of both loaves to create a sweet, slightly crunchy topping.
  • Bake in the preheated oven for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs attached. Rotate pans halfway through baking if your oven has hot spots.
  • Let the loaves cool in the pans for 10 minutes, then run a knife around the edges and transfer the loaves to a wire rack to cool slightly.
  • Slice and serve warm for the best melt-in-your-mouth experience, or cool to room temperature for easy slicing and storage.

Notes

For extra texture, fold in 1/2 cup chopped walnuts or pecans. Toast them lightly first for deeper flavor.
