Instructions
Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly grease it for easy removal.
In a large mixing bowl, combine flour, sugar, baking powder, and cinnamon. Add cold, cubed butter and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture looks like coarse crumbs. Add the egg and mix until just combined—it will still be crumbly.
Press about two-thirds of the crumb mixture firmly into the bottom of your prepared pan to form a solid crust.
In another bowl, toss the diced apples with sugar, flour, cinnamon, and nutmeg until the apples are evenly coated and the mixture looks glossy.
Spread the apple mixture evenly over the crust in the pan.
Sprinkle the remaining crumb mixture over the apples, covering as evenly as possible.
Bake for 35-40 minutes, or until the top is golden and the apple layer is bubbling.
Allow the bars to cool completely in the pan before lifting out using the parchment paper. Slice into squares and serve.
