Instructions
Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
Combine graham cracker crumbs, 1/4 cup sugar, and 6 tablespoons melted butter. Press into pan and bake for 10 minutes. Let cool.
In a bowl, beat cream cheese, 3/4 cup sugar, and vanilla until smooth. Add eggs one at a time, mixing on low speed.
Spread baked apples over cooled crust. Pour cheesecake filling over the apples and smooth out.
In a bowl, mix oats, brown sugar, and 1/2 cup melted butter until crumbly. Sprinkle over cheesecake layer.
Bake for 50-60 minutes until the center is set but slightly jiggly. Cool for 1 hour at room temperature.
Chill in refrigerator for at least 4 hours or overnight.
Before serving, drizzle with caramel sauce and enjoy!

Use room temperature cream cheese for a smooth filling. Let cheesecake chill thoroughly before slicing for best results.
