  • 2 cups cinnamon graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons butter, melted
  • 2 packages (8 oz) cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 3 cups baked apples (store-bought or homemade)
  • 1 cup oats
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 1/2 cup caramel sauce

Instructions

  • Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
  • Combine graham cracker crumbs, 1/4 cup sugar, and 6 tablespoons melted butter. Press into pan and bake for 10 minutes. Let cool.
  • In a bowl, beat cream cheese, 3/4 cup sugar, and vanilla until smooth. Add eggs one at a time, mixing on low speed.
  • Spread baked apples over cooled crust. Pour cheesecake filling over the apples and smooth out.
  • In a bowl, mix oats, brown sugar, and 1/2 cup melted butter until crumbly. Sprinkle over cheesecake layer.
  • Bake for 50-60 minutes until the center is set but slightly jiggly. Cool for 1 hour at room temperature.
  • Chill in refrigerator for at least 4 hours or overnight.
  • Before serving, drizzle with caramel sauce and enjoy!

Notes

Use room temperature cream cheese for a smooth filling. Let cheesecake chill thoroughly before slicing for best results.
