Ingredients

Taco Shells

  • 6 small flour tortillas

Filling

  • 1 cup diced apples
  • 1/2 cup cream cheese softened
  • 1/4 cup sour cream
  • 1/3 cup sugar plus 2 tablespoons for sprinkling
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter melted

Optional Toppings

  • caramel sauce for drizzling
  • chopped nuts for topping

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix together the cream cheese, sour cream, 1/3 cup sugar, and vanilla extract until smooth.
  • In another bowl, toss the diced apples with cinnamon and the remaining 2 tablespoons of sugar.
  • Brush each tortilla lightly with melted butter, sprinkle with a little sugar, and mold into a taco shape using an inverted muffin tin as a guide.
  • Bake the tortillas for 10-12 minutes or until crispy.
  • Once cooled, fill each taco shell with the cream cheese mixture, top with the cinnamon apples, and drizzle with optional caramel sauce and chopped nuts.

Notes

These Apple Cheesecake Tacos are best served fresh out of the oven. You can garnish them with extra caramel sauce or chopped nuts to make them even more special.
