Instructions
Preheat your oven to 350°F (175°C).
In a bowl, mix together the cream cheese, sour cream, 1/3 cup sugar, and vanilla extract until smooth.
In another bowl, toss the diced apples with cinnamon and the remaining 2 tablespoons of sugar.
Brush each tortilla lightly with melted butter, sprinkle with a little sugar, and mold into a taco shape using an inverted muffin tin as a guide.
Bake the tortillas for 10-12 minutes or until crispy.
Once cooled, fill each taco shell with the cream cheese mixture, top with the cinnamon apples, and drizzle with optional caramel sauce and chopped nuts.
